  • 1 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 2 tbsp flour
  • 1/2 tsp salt
  • 1/4 tsp white pepper
  • 1 20-oz can pineapple tidbits
  • 1/2 cup orange juice
  • 2 tbsp low-sodium soy sauce
  • 1/3 cup apple cider vinegar
  • 1/4 cup sugar
  • 3/4 of the recipe ‘Healthy Meatballs’ (recipe is included here) – baked
  • 4 cups hot, cooked brown rice.

  • Ingredients for Healthy Meatballs:
  • (This recipe serves 12, and yields 36 meatballs)
  • 1 egg white
  • 2 cloves garlic, minced
  • 1 slice cracked wheat French bread
  • 1/2 cup finely-shredded carrot
  • 1/4 cup tomato juice
  • 1/2 tsp salt
  • 1/8 tsp white pepper
  • 1/2 tsp dried marjoram
  • 1/4 cup chopped flat-leaf parsley
  • 1 1/2 lbs ground turkey breast

Directions
  1. For light & sour:
  2. In large saucepan, heat olive oil over medium heat.
  3. Add onion & garlic; cook and stir for 4 minutes.
  4. Sprinkle with flour, salt and pepper.
  5. Cook until bubbly, about 3 minutes.
  6. Add pineapple tidbits with their liquid, the orange juice, soy sauce, cider vinegar, and sugar.
  7. Bring to a boil, stirring frequently, until the sugar dissolves.
  8. Simmer for 5 minutes.
  9. Add 3/4 of the meatballs from the ‘healthy meatballs’ recipe to the sauce. (Remaining meatballs may be frozen for another use)
  10. Stir gently and bring back to a simmer.
  11. Simmer 5 to 7 minutes, until meatballs are hot.
  12. Serve immediately over rice.

  14. For ‘Healthy Meatballs’:
  15. Preheat oven to 400*F.
  16. In large bowl, combine all ingredients except ground turkey; mix well.
  17. Now add the turkey, and mix until well combined.
  18. Shape into 36 meatballs, about 1 inch wide each.
  19. Spray a cookie sheet with non-stick coating & arrange meatballs about 1 inch apart from each other.
  20. Bake for 15 to 20 minutes, or until golden, and they register 165 on a meat thermometer.
  21. Drain on wire rack over paper toweling.
