Ingredients
  • 1/2 cup brown sugar, firmly packed
  • 1/3 cup butter
  • 2 tbls. whipping cream
  • 3/4 cup finely chopped almond, pecans, or unsalted peanuts
  • ( I have made all 3 and prefer the pecans)
  • 3 tbls. flour
  • Whipped cream-optional
  • Semisweet chocolate chips, melted-optional

Directions
  1. Preheat oven to 350
  2. Put brown sugar, butter and whipping cream into saucepan and bring to boil over medium heat, stirring constantly
  3. Remove from heat
  4. Stir in nuts and flour
  5. Line cookie sheets with parchment paper
  6. Spoon batter by tablespoons 3 inches apart
  7. Spread batter into circle
  8. Bake for 6-8 minutes or until edges are light brown
  9. Remove from oven and cool slightly
  10. When cool enough to hold their shape, lift off with spatula and flip cookies over and wrap around something round (I have used the handle of a wooden spoon until I got round dowels from Home Depot)
  11. ~If cookies become too crisp to roll, reheat for 30 seconds or so~
  12. These cookies are great on their own but I have dipped the ends into melted chocolate and let harden
  13. Then filled with whipped cream right before serving

I love lace cookies - so delicate, and they melt in your mouth. I have to try your recipe with the dipping chocolate suggestion...takes them one more step beyond heaven!
