Chili Skillet

- 1 lb ground beef shopping list
- 1 cup chopped onion shopping list
- 1/2 cup chopped green pepper shopping list
- 1 garlic clove, minced shopping list
- 1 cup tomato juice shopping list
- 1 can (8 oz) kidney beans, undrained shopping list
- 4 tsp chili powder shopping list
- 1 tsp dried oregano shopping list
- 1 tsp salt shopping list
- 1/2 cup uncooked long grain rice shopping list
- 1 cup canned or frozen corn shopping list
- 1/2 cup sliced ripe olives shopping list
- 1 cup (4 oz) shredded Monterey Jack or cheddar cheese shopping list
How to make it
- In a large skillet over medium heat, cook beef, onion, pepper and garlic until meat is brown and veggies are tender. Drain fat.
- Add tomato juice, kidney beans, chili powder, oregano, salt and rice. Cover and simmer about 25 minutes or until rice is tender.
- Stir in corn and olives. Cover and cook 5 minutes more. Sprinkle with cheese. Cover and cook only until cheese melts, about 5 minutes.

I love the corn and olives added right to the chili here, darlene! It's also much more convenient to have the cheese "built in". You could always add more if you want. This post earns my thanks and my five for sure!
