How to make it

  • Combine cheddar cheese, blue and cream cheese in the bowl of the food processor.
  • Add caraway seeds, paprika and beer.
  • Blend until smooth.
  • Transfer to a crock or serving dish.
  • Serve at room temperature with crackers.
  • Alternately spread on grilled burgers or hot dogs.
  • Or spread on a thick slice of hearty wheat bread, and broil until bubbly, top with bacon and a slice of tomato for a knife and fork sandwich that can't be beat.

  • **Please note that the resident critic noted that the caraway and stout was very strongly flavored and perhaps this would be better made with a lighter Ale. Personally, I love the depth of the barley flavor and like it paired with the stronger cheese. It is up to you.

    As far as I know a rasher is a "serving size" and depending on your love of bacon in my house that could be 2 sllices for one or half a lb. for the other. LOL Dictionary online says: "A thin slice of bacon, or a portion (an order) consisting of three slices of bacon or ham." Charles Dickens. (1812-1870) referred to a "rasher of bacon" I do believe they were being clever in referring to a rasher of shrimp.

    Just how much is a rasher? This is a question that I have thought about off and on for 15 years, ever since I ordered a rasher of shrimp in a Madrid café. Delightful recipe.
