Mexican Corn Recipe
This is an easy way to season up a common vegetable mixture.

Ingredients
  • 1 11oz can Green Giant Mexicorn
  • 1 green onion, chopped
  • 6 olives, sliced
  • 1/4 tsp crushed rosemary
  • 1 tbl Olive oil
  • 1/2 tsp cilantro, chopped

Directions
  1. Mix corn, onion, olives, rosemary. Add olive oil to 10" skillet, heat. Add the corn mixture and fry for 5 minutes. Add cilantro. Stir and remove. Serve.

I do this with a can of partially drained Rotel, frozen corn, green onion, parsley and cilantro...so quick, so easy...a great side dish for any Mexican dish. :) Great addition, darlin'. :)
