SPICY CHINESE PEPPERCORN NOODLES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Holbert Estate in Fort Worth, Texas in 1988. Another tried and true delight that I serve often.

Ingredients
  • 8 ounces minced pork
  • 1 tablespoon dark soy sauce
  • 1 teaspoon salt
  • 8 ounces peanut oil
  • 3 tablespoons finely chopped garlic
  • 2 tablespoons finely chopped peeled fresh ginger root
  • 5 tablespoons finely chopped green onions
  • 2 tablespoons peanut butter
  • 2 tablespoons dark soy sauce
  • 2 tablespoons chili oil
  • 2 teaspoons salt
  • 8 ounces chicken stock
  • 12 ounces fresh egg noodles
  • 1 tablespoon peppercorns roasted and ground

Directions
  1. Combine pork, soy sauce and salt in small bowl and mix well.
  2. Heat a wok or frying pan until hot.
  3. Add oil and deep fry pork stirring with spatula to break into small pieces.
  4. When pork is crispy and dry about 4 minutes remove with slotted spoon.
  5. Drain on paper towels.
  6. Pour off oil leaving 2 tablespoons in wok.
  7. Reheat wok or pan then add garlic, ginger and onions and stir fry 30 seconds.
  8. Add peanut butter, soy sauce, chili oil, salt and chicken stock.
  9. Simmer for 4 minutes.
  10. Cook noodles in large pot of boiling water for 2 minutes if they are fresh or 5 minutes if they are dried.
  11. Drain noodles well.
  12. Pour noodles in a large bowl and ladle sauce over all then top with pork mixture and roasted peppercorns.
