How to make it

  • Combine pork, soy sauce and salt in small bowl and mix well.
  • Heat a wok or frying pan until hot.
  • Add oil and deep fry pork stirring with spatula to break into small pieces.
  • When pork is crispy and dry about 4 minutes remove with slotted spoon.
  • Drain on paper towels.
  • Pour off oil leaving 2 tablespoons in wok.
  • Reheat wok or pan then add garlic, ginger and onions and stir fry 30 seconds.
  • Add peanut butter, soy sauce, chili oil, salt and chicken stock.
  • Simmer for 4 minutes.
  • Cook noodles in large pot of boiling water for 2 minutes if they are fresh or 5 minutes if they are dried.
  • Drain noodles well.
  • Pour noodles in a large bowl and ladle sauce over all then top with pork mixture and roasted peppercorns.
