Ingredients
  • 1 tbls. cornstarch
  • 1/4 tsp. salt
  • 1-15 oz. can cream of coconut
  • 2/3 cup milk
  • 2 egg yolks, beaten
  • 2 tbls. butter
  • 1-8oz. can crushed pineapple, drained
  • 1/2 cup flaked coconut
  • 3 tbls. light rum

Directions
  1. In saucepan, add cornstarch and salt
  2. Stir in cream of coconut and milk
  3. Cook over medium heat, stirring constantly, until thick and bubbly
  4. Gradually stir in about 1/4 of hot mixture into egg yolks to temper
  5. Add to remaining hot mixture, stirring constantly
  6. Cook for 1 minute or so until thickened, stirring constantly
  7. Remove from heat
  8. Add butter, stirring until melted
  9. Let cool
  10. Stir in pineapple, coconut and rum
  11. Cover and chill
