How to make it

  • In saucepan, add cornstarch and salt
  • Stir in cream of coconut and milk
  • Cook over medium heat, stirring constantly, until thick and bubbly
  • Gradually stir in about 1/4 of hot mixture into egg yolks to temper
  • Add to remaining hot mixture, stirring constantly
  • Cook for 1 minute or so until thickened, stirring constantly
  • Remove from heat
  • Add butter, stirring until melted
  • Let cool
  • Stir in pineapple, coconut and rum
  • Cover and chill
