Pina Colada Sauce

- 1 tbls. cornstarch shopping list
- 1/4 tsp. salt shopping list
- 1-15 oz. can cream of coconut shopping list
- 2/3 cup milk shopping list
- 2 egg yolks, beaten shopping list
- 2 tbls. butter shopping list
- 1-8oz. can crushed pineapple, drained shopping list
- 1/2 cup flaked coconut shopping list
- 3 tbls. light rum shopping list
How to make it
- In saucepan, add cornstarch and salt
- Stir in cream of coconut and milk
- Cook over medium heat, stirring constantly, until thick and bubbly
- Gradually stir in about 1/4 of hot mixture into egg yolks to temper
- Add to remaining hot mixture, stirring constantly
- Cook for 1 minute or so until thickened, stirring constantly
- Remove from heat
- Add butter, stirring until melted
- Let cool
- Stir in pineapple, coconut and rum
- Cover and chill
