Coconut-Chocolate Chip Crunch Cookies

- 1 cup softened butter shopping list
- 3/4 cup sugar shopping list
- 3/4 cup packed brown sugar shopping list
- 2 eggs shopping list
- 2 tsp vanilla extract shopping list
- 1 tsp almond extract shopping list
- 3 cups flour shopping list
- 1 tsp baking soda shopping list
- 3/4 tsp salt shopping list
- 2 cups flaked coconut shopping list
- 1 pkgs semi-chocolate chips shopping list
- 1/2 pkg milk chocolate chunks shopping list
- optional: 1-1/2 cups finely chopped almonds shopping list
How to make it
- In large mixing bowl, cream butter and sugars until light and fluffy
- Beat in eggs and extracts
- Combine the flour, baking soda and salt; gradually add to creamed mixture and mix well
- Stir in coconut, chips, chunks and nuts
- Drop by rounded teaspoons onto baking sheets lined with parchment paper 2" apart
- Bake at 375 for 9-11 minutes or until light browned
- Cool for one minute on sheets before removing to wire racks to cool
- Note: the recipe called for only 2 cups of flour but the first batch spread very thin, and the dough was so sticky that I continued adding flour till the dough was a little sticky but when I rolled them in my hands they did not stick. You may need to judge if 3 cups is even enough flour, do not add too much.
