Coconut-chocolate Chip Crunch Cookies Recipe

Ingredients

1 cup softened butter

3/4 cup sugar

3/4 cup packed brown sugar

2 eggs

2 tsp vanilla extract

1 tsp almond extract

3 cups flour

1 tsp baking soda

3/4 tsp salt

2 cups flaked coconut

1 pkgs semi-chocolate chips

1/2 pkg milk chocolate chunks

optional: 1-1/2 cups finely chopped almonds

Directions

In large mixing bowl, cream butter and sugars until light and fluffy

Beat in eggs and extracts

Combine the flour, baking soda and salt; gradually add to creamed mixture and mix well

Stir in coconut, chips, chunks and nuts

Drop by rounded teaspoons onto baking sheets lined with parchment paper 2" apart

Bake at 375 for 9-11 minutes or until light browned

Cool for one minute on sheets before removing to wire racks to cool

Note: the recipe called for only 2 cups of flour but the first batch spread very thin, and the dough was so sticky that I continued adding flour till the dough was a little sticky but when I rolled them in my hands they did not stick. You may need to judge if 3 cups is even enough flour, do not add too much.
