How to make it

  • In large mixing bowl, cream butter and sugars until light and fluffy
  • Beat in eggs and extracts
  • Combine the flour, baking soda and salt; gradually add to creamed mixture and mix well
  • Stir in coconut, chips, chunks and nuts
  • Drop by rounded teaspoons onto baking sheets lined with parchment paper 2" apart
  • Bake at 375 for 9-11 minutes or until light browned
  • Cool for one minute on sheets before removing to wire racks to cool
  • Note: the recipe called for only 2 cups of flour but the first batch spread very thin, and the dough was so sticky that I continued adding flour till the dough was a little sticky but when I rolled them in my hands they did not stick. You may need to judge if 3 cups is even enough flour, do not add too much.
