  • 1 cup all-purpose flour
  • 1/2 cup whole-wheat pastry flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 1/2tsp cinnamon, divided
  • 3/4 cup brown sugar, divided
  • 1/4 cup granulated sugar, divided
  • 2 large, ripe bananas, mashed
  • 1/4 cup low-fat sour cream
  • 2 egg whites
  • 1/3 cup canola oil
  • 1 tsp vanilla
  • 1/3 cup sliced, toasted almonds
  • 3 tbsp wheat germ
  • 2 tbsp butter, melted

Directions
  1. Preheat oven to 375*F
  2. Prepare muffin pan with liners or butter & flour
  3. ============================
  4. In large bowl, combine:
  5. all-purpose flour
  6. whole wheat flour
  7. baking powder
  8. baking soda
  9. salt
  10. 1 tsp cinnamon
  11. 1/2 cup brown sugar
  12. 2 tbsp granulated sugar
  13. ============================
  14. Mix together well.

  16. Add to the dry ingredients:
  17. mashed bananas
  18. sour cream
  19. egg whites
  20. canola oil
  21. vanilla
  22. wheat germ
  23. melted butter
  24. Stir until just moistened
  25. Stir in the almonds
  26. Spoon batter into muffin pan.
  27. Add melted butter and mix until crumbly
  28. Bake for 18-22 minutes or until golden brown and a toothpick inserted in the center comes out clean.
  29. Remove to wire rack to cool.
