Low-fat Banana-almond Muffins

- 1 cup all-purpose flour shopping list
- 1/2 cup whole-wheat pastry flour shopping list
- 1 tsp baking powder shopping list
- 1/2 tsp baking soda shopping list
- 1/4 tsp salt shopping list
- 1 1/2tsp cinnamon, divided shopping list
- 3/4 cup brown sugar, divided shopping list
- 1/4 cup granulated sugar, divided shopping list
- 2 large, ripe bananas, mashed shopping list
- 1/4 cup low-fat sour cream shopping list
- 2 egg whites shopping list
- 1/3 cup canola oil shopping list
- 1 tsp vanilla shopping list
- 1/3 cup sliced, toasted almonds shopping list
- 3 tbsp wheat germ shopping list
- 2 tbsp butter, melted shopping list
How to make it
- Preheat oven to 375*F
- Prepare muffin pan with liners or butter & flour
- ============================
- In large bowl, combine:
- all-purpose flour
- whole wheat flour
- baking powder
- baking soda
- salt
- 1 tsp cinnamon
- 1/2 cup brown sugar
- 2 tbsp granulated sugar
- ============================
- Mix together well.
- ==================****
- Add to the dry ingredients:
- mashed bananas
- sour cream
- egg whites
- canola oil
- vanilla
- wheat germ
- melted butter
- Stir until just moistened
- Stir in the almonds
- Spoon batter into muffin pan.
- Add melted butter and mix until crumbly
- Bake for 18-22 minutes or until golden brown and a toothpick inserted in the center comes out clean.
- Remove to wire rack to cool.
