Irish Cookies

- 1 cup brown sugar shopping list
- 3/4 cup shorting shopping list
- 1/2 cup raisins juice shopping list
- 1-1/4 cup cooked raisins shopping list
- 1 tsp soda dissolved in juice shopping list
- 2 eggs shopping list
- 1 tsp. nutmeg shopping list
- 3-3/4 cup flour shopping list
- 1/2 cup nuts chopped shopping list
- 1 cup sugar shopping list
- salt shopping list
How to make it
- Cook raisins in water, save juice to mix with soda.
- Cream brown sugar and shorting and raisins and juice
- Add eggs
- Add flour, nutmeg and nuts
- Last add sugar
- Mix and then bake as cookies, nice spoon full.
- bake 375 about 7 min, or light brown. Do not over cook as it will make them hard.

These sounds wonderfully sweet. Question: What is raisin juice? Is it the liquid the raisins were cooked in?

I have had these. My grandmother called them, paddy cookies,lol. They are delicious and I don't think they are too sweet.
