Yoghurt Pie With Spinach

- 1 1/4 Tbsp olive oil shopping list
- 400g English spinach, washed drained and stalks removed shopping list
- 500g thick Greek-style yoghurt shopping list
- 14-16 spring onions, sliced shopping list
- 2/3 fine polenta shopping list
- 1/2 cup finely chopped fresh mint shopping list
- strips of lemon rind and spring onion to garnish shopping list
How to make it
- Preheat the oven to warm 170 d C. Brush a 23 cm diameter pie dish with 1/4 tablespoon of the oil. Arrange half the spinach over the base and sides of the dish.
- Combine the yoghurt, spring onion, polenta, mint and some pepper.
- Spoon into the dish and cover with the remaining spinach. Brush with remaining oil. Cover loosely with foil and bake for 45 minutes, or until set in the centre. Cool for 15 minutes, then serve topped with the strips of lemon rind and spring onion.
