This is based on an old Greek recipe and is sometimes made with vine leaves. Do not substitute silverbeet as the flavour is too bitter.

  • 1 1/4 Tbsp olive oil
  • 400g English spinach, washed drained and stalks removed
  • 500g thick Greek-style yoghurt
  • 14-16 spring onions, sliced
  • 2/3 fine polenta
  • 1/2 cup finely chopped fresh mint
  • strips of lemon rind and spring onion to garnish

Directions
  1. Preheat the oven to warm 170 d C. Brush a 23 cm diameter pie dish with 1/4 tablespoon of the oil. Arrange half the spinach over the base and sides of the dish.
  2. Combine the yoghurt, spring onion, polenta, mint and some pepper.
  3. Spoon into the dish and cover with the remaining spinach. Brush with remaining oil. Cover loosely with foil and bake for 45 minutes, or until set in the centre. Cool for 15 minutes, then serve topped with the strips of lemon rind and spring onion.
