Fattoush Salad with Lemon Vinaigrette

This is a great way to feed lots of your friends while the main course is cooking I make this when we go camping and the meat will be cooking slowing this travel well and is quite filling.....hope you enjoy
Ingredients
- 4 1/2 cups cherry tomatoes, diced shopping list
- 4 1/2 cups cucumber, diced shopping list
- 1 1/2 cups red onions, thinly sliced shopping list
- 1 cup cilantro, chopped lightly packed shopping list
- 1 cup fresh mint, chopped, lightly packed shopping list
- 18 hearts of romaine lettuce, roughly chopped toasted pita bread, broken into pieces shopping list
- crumbled feta cheese shopping list
- kalamata olives, pitted shopping list
- vinaigrette shopping list
- 1 1/2 Tbs. garlic, chopped, sauteed briefly shopping list
- 1 1/2 cups lemon juice shopping list
- 1/2 cup rice vinegar shopping list
- 1 tsp. sugar shopping list
- 1 tsp. cumin seed, toasted and ground shopping list
- 2 3/4 cups olive oil shopping list
- 3/4 cups extra virgin olive oil shopping list
- coarse salt and freshly ground black pepper to taste shopping list
How to make it
- Add salad ingredients to a large bowl and toss to combine. Mix vinaigrette ingredients together and use to dress salad.
