Ingredients
  • 1-8 oz. pkg. cream cheese
  • 1 tbls. butter, softened
  • 4 cups powdered sugar
  • 1 cup flaked coconut
  • 2 cups semisweet chocolate chips
  • 1 tbls. shortening

Directions
  1. Cook time does not include chill time
  2. In mixing bowl, beat cream cheese and butter until smooth
  3. Add sugar and coconut and mix until combined
  4. Refrigerate until easy to handle, 1-2 hours
  5. Using hands dusted with powdered sugar, mold rounded tablespoonfuls of coconut mixture into
  6. egg shapes
  7. Put onto a waxed paper lined baking sheet
  8. Freeze an hour or so or until slightly firm
  9. Melt chocolate chips and shortening in double boiler
  10. Take eggs from freezer, a couple at a time and dip into chocolate completely
  11. Return to waxed paper
  12. Refrigerate and ready to eat when completely hardened
  13. Keep in fridge
