Coconut Cream Eggs

- 1-8 oz. pkg. cream cheese shopping list
- 1 tbls. butter, softened shopping list
- 4 cups powdered sugar shopping list
- 1 cup flaked coconut shopping list
- 2 cups semisweet chocolate chips shopping list
- 1 tbls. shortening shopping list
How to make it
- Cook time does not include chill time
- In mixing bowl, beat cream cheese and butter until smooth
- Add sugar and coconut and mix until combined
- Refrigerate until easy to handle, 1-2 hours
- Using hands dusted with powdered sugar, mold rounded tablespoonfuls of coconut mixture into
- egg shapes
- Put onto a waxed paper lined baking sheet
- Freeze an hour or so or until slightly firm
- Melt chocolate chips and shortening in double boiler
- Take eggs from freezer, a couple at a time and dip into chocolate completely
- Return to waxed paper
- Refrigerate and ready to eat when completely hardened
- Keep in fridge
