Ingredients
  • 1/2 cup sugar
  • 1 1/4 cups plain flour
  • 1 Tsp bi-carbonate of soda
  • 1 Tsp ground ginger
  • 1 Tsp ground cinnamon
  • 1/4 Tsp ground nutmeg
  • 1/4 Tsp ground cloves
  • 1/2 cup cooking oil
  • 1/2 cup dark molasses
  • 1 large egg
  • 1/2 cup hot water
  • 12 flat bottom, plain ice-cream cones

Directions
  1. Preheat oven 180 d C.
  2. In a bowl, mix all dry ingredients.
  3. Add oil, molasses, egg and water. Mix until well blended.
  4. Spoon batter equally into ice-cream cones.
  5. Place cones upright and slightly apart in a baking pan.
  6. Bake for 20 minutes or until skewer inserted in centre of a cupcake comes out clean.
  7. Place cupcake cones on rack and allow to cool completely.
  8. If made ahead, store uncovered at room temperature up to a day. Cones soften if covered.
  9. Decorate as desired with whipped cream or scoop of ice cream and some sprinkles.
  10. RECIPE NOTES: Use cones that are about 7.5 cm high, without cracks or holes.
