Gingerbread Cupcakes In Cones

- 1/2 cup sugar shopping list
- 1 1/4 cups plain flour shopping list
- 1 Tsp bi-carbonate of soda shopping list
- 1 Tsp ground ginger shopping list
- 1 Tsp ground cinnamon shopping list
- 1/4 Tsp ground nutmeg shopping list
- 1/4 Tsp ground cloves shopping list
- 1/2 cup cooking oil shopping list
- 1/2 cup dark molasses shopping list
- 1 large egg shopping list
- 1/2 cup hot water shopping list
- 12 flat bottom, plain ice-cream cones shopping list
How to make it
- Preheat oven 180 d C.
- In a bowl, mix all dry ingredients.
- Add oil, molasses, egg and water. Mix until well blended.
- Spoon batter equally into ice-cream cones.
- Place cones upright and slightly apart in a baking pan.
- Bake for 20 minutes or until skewer inserted in centre of a cupcake comes out clean.
- Place cupcake cones on rack and allow to cool completely.
- If made ahead, store uncovered at room temperature up to a day. Cones soften if covered.
- Decorate as desired with whipped cream or scoop of ice cream and some sprinkles.
- RECIPE NOTES: Use cones that are about 7.5 cm high, without cracks or holes.
