Santa Fe Chicken

- 2 whole chicken breasts halved boned and skinned shopping list
- 4 tablespoons jalapeno jelly melted shopping list
- 2 sweet red peppers roasted and skinned shopping list
- Marinade: shopping list
- 1/4 cup olive oil shopping list
- juice and zest of l small lime shopping list
- l clove garlic crushed shopping list
- l ounce tequila shopping list
- 1/4 teaspoon bottled hot pepper sauce shopping list
- 1/8 teaspoon liquid smoke shopping list
- 1/4 teaspoon salt. shopping list
How to make it
- Place chicken between 2 pieces of wax paper and gently pound to 1/4" thickness.
- In large plastic zip lock bag place chicken in single layer then add marinade.
- Close bag then refrigerate and marinate 1 hour turning once.
- Remove chicken from marinade and place on broiler pan.
- Brush liberally with marinade then arrange rack 6” from heat and broil 8 minutes.
- Turn and broil 8 minutes more or until chicken is brown then brush with melted jelly.
- Place 2 roasted pepper strips to form an X on each breast half.
- Spoon on remaining jelly then return chicken to oven until brown and slightly glazed.
