SANTA FE CHICKEN This recipe came from an estate sale. I obtained it when I purchased the family collection from the Garcia Estate in McKinney, Texas in 1988. Tried and true and incredibly good. I love this recipe and make it often.

Ingredients
  • 2 whole chicken breasts halved boned and skinned
  • 4 tablespoons jalapeno jelly melted
  • 2 sweet red peppers roasted and skinned
  • Marinade:
  • 1/4 cup olive oil
  • Juice and zest of l small lime
  • l clove garlic crushed
  • l ounce tequila
  • 1/4 teaspoon bottled hot pepper sauce
  • 1/8 teaspoon liquid smoke
  • 1/4 teaspoon salt.

Directions
  1. Place chicken between 2 pieces of wax paper and gently pound to 1/4" thickness.
  2. In large plastic zip lock bag place chicken in single layer then add marinade.
  3. Close bag then refrigerate and marinate 1 hour turning once.
  4. Remove chicken from marinade and place on broiler pan.
  5. Brush liberally with marinade then arrange rack 6” from heat and broil 8 minutes.
  6. Turn and broil 8 minutes more or until chicken is brown then brush with melted jelly.
  7. Place 2 roasted pepper strips to form an X on each breast half.
  8. Spoon on remaining jelly then return chicken to oven until brown and slightly glazed.
