Wilted Dandelion Greens Recipe
WILTED DANDELION GREENS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Anderson Estate in Wylie, Texas in 1991.

Ingredients
  • 2 quarts dandelion greens
  • 1/4 cup bacon fat
  • 1/4 cup cider vinegar
  • 2 teaspoons granulated sugar
  • 1 teaspoon salt
  • 2 tablespoons chopped fresh parsley

Directions
  1. Wash greens thoroughly and cut off any stems.
  2. Cut into small pieces with scissors.
  3. Heat bacon fat, vinegar, sugar, and salt in a heavy saucepan.
  4. Wipe greens dry and add.
  5. Cook over moderate heat covered until wilted and tender about 12 minutes.
  6. Stir in parsley then serve immediately.

The best thing about this recipe, is that we can all get the dandelion greens for free in our yard come spring time! I love the seasonings here! Will definitely try!


You are a busy busy cooker!! Not to be silly BUT can you really just pick them out of your yard?? Assuming that you don't have fertilizer on the yard?? Sounds wonderful.
