This is a delicious "mousse au chocolat". Use dark Belgian Chocolate (Callebaut)

Ingredients
  • 50 gram sugar
  • 1 teaspoon cinnamon
  • 3 spoons of dark rum
  • 3 eggs
  • 250 gram cream
  • 250 gram dark chocolate (Belgian)

Directions
  1. Melt the chocolate "au bain-marie"
  2. Whip the cream
  3. Separate the eggs white and yellow
  4. Beat the eggs white until you can hold the bowl upside down. The egg white should stay in :-)
  5. In a large bowl with a hand held mixer, place the sugar and the egg yellow, and cream together until light and fluffy.
  6. Add the teaspoon of cinnamon and the spoons of rum and stir
  7. Add the whipped cream and stir
  8. Add the beaten egg whites and gently stir it under.
  9. Put in the refrigerator for at least 3 hours.
  10. Bon Appetit!
