Chimis With Sour Orange Slaw

- 1 1/4 pound ground beef chuck shopping list
- 1 medium onion, finely chopped shopping list
- 1/2 large red bell pepper, diced shopping list
- 2 garlic cloves, minced shopping list
- 1/3 cup chopped cilantro shopping list
- 1 teaspoon dried oregano shopping list
- 1 tablespoon worcestershire sauce shopping list
- 1 tsp of salt shopping list
- 1/2 tsp of cayenne pepper shopping list

- 4 large soft hamburger buns, split, buttered and grilled shopping list

- 2 cups cole slaw mix-I prefer the angel hair slaw mix shopping list
- 3 tbsp of salad oil shopping list
- 1 tbsp of orange juice (sour orange mix can be found in with ethnic foods, other wise sub orange and lemon juce) shopping list
- 1/2 of a lime squeezed shopping list
- 1 tsp of soy sauce shopping list
- 2 tsp of sugar shopping list
- 1/4 tsp of garlic powder shopping list
- 2 minced green onions, slivered to mimic slaw mix shred shopping list

- 1 small red onion, cut into rings shopping list
- 1 tomato, sliced 1/4 inch thick shopping list

- 1 chipotle pepper in adobo sauce minced shopping list
- 2 tablespoons ketchup shopping list
- 2 tablespoons mayonnaise shopping list
- 1 tablespoon yellow mustard shopping list
- 1/2 tsp of ground oregano shopping list
How to make it
- Mix together beef, onion, bell pepper, garlic, oregano, Worcestershire sauce, salt and pepper.
- Divide into four equal portions and flatten into patties with a slight divot in the middle.
- That way when it is grilled, the middle won't get too thick.
- Refrigerate, covered.
- Meanwhile prepare slaw:
- Whisk the orange juice, lime juice, sugar, soy sauce, garlic powder and oil.
- Pour over slivered green onion and slaw mix.
- Toss with tongs to coat evenly. Refrigerate to wilt and flavors to meld..
- Heat your charcoal grill to med high heat.
- Oil the grill.
- Grill the prepped burgers over medium coals about 10 minutes total.
- Butter and toast rolls while grilling burgers.
- Grill thick slices of red onion and tomato on well oiled grill until they develop a bit of char, that adds immensely to the overall flavor.
- Stir together minced chipotle, ketchup, mayonnaise, and mustard, and a touch more oregano. Set aside.
- Assemble burger on toasted bun, top with charred onion, tomato, and wilted slaw.
- Drizzle with spicy sauce.
- It is drippy, delicious and you'll never miss the cheese.
