Almond Cherry Biscotti Recipe
This simple cookie is just sweet enough and crunchy enough to satisfy the sweet tooth but is surprisingly low in calories. If you aren't worried about the calories dip the finished cookie in a dark or white chocolate.

Ingredients
  • 1 1/2 c flour
  • 1/4 c packed light brown sugar
  • 1/2 teas baking powder
  • 2 eggs lightly beaten
  • 1/4 c skim milk
  • 1 1/2 T canola oil
  • 1 T honey
  • 1/2 teas almond extract
  • 1 oz toasted almond slices
  • 1 oz dried cherries cut in half
  • 1/2 c flour ( bench flour)

Directions
  1. Preheat oven to 350 F
  2. Add the three dry ingredients together and mix well
  3. Whisk the eggs, milk, oil, and honey together
  4. Stir into the dry ingredients until just mixed
  5. Add the almonds and cherries
  6. Mix until incorporated
  7. Place about half the bench flower on the counter
  8. Flour hands
  9. Knead the dough into a 10x3x1 log, the dough will be very, very soft
  10. Place on a cookie (you'll probably have to reshape the loaf)
  11. Bake 35-30 minutes until the loaf started to brown
  12. Remove from the oven and let cool
  13. Slice into 24 slices (a little less than 1/2" thick)
  14. Arrange on a cookie sheet
  15. Bake 10 minutes and flip the cookies
  16. Bake an additional 5-10 minutes
  17. Cool
  18. The cookies should be crisp
  19. Melt your favorite chocolate and dip one end of the cookie into the chocolate and let cool. Great snack or great dipped in coffee. Each plain cookie is around 40 calories.
