A typical Hungarian paprika dish, like my grandma used to make (a lot better than I can).

Ingredients
  • 4 lb Chicken
  • large dab of lard
  • 2 onions
  • 2 tbsp sweet paprika powder
  • 1 small sweet red pepper
  • 1 small green pepper
  • 1-2 tomatoes
  • 2 tbsp flour
  • 2 - 3 cups of water or chicken stock
  • 1 cup of sour cream (optional)
  • salt and pepper to taste

Directions
  1. Cut chicken into serving size pieces, coat with flour
  2. Heat lard in heavy pot, brown chicken pieces
  3. Remove chicken, add onions and fry at lower temperature until glassy
  4. Add chopped fresh peppers and tomatoes (halved), gently fry until soft
  5. Add paprika powder and fry a couple of minutes
  6. Add stock or water and stir
  7. Add salt and pepper together with chicken pieces (my grandma put in whole black peppercorns which provide an interesting surprise -to be done with caution! - but I like it)
  8. Bring to boil then reduce to very low temperature to finish
  9. Check liquid and stir occasionally to avoid sticking, add liquid as necessary.
  10. Shortly before serving stir in sour cream if used
