Ingredients
  • 2 large onions coarsley chopped{2 cups}
  • 2 cloves minced garlic
  • 1/4 cup vegetable oil
  • 10 oz. uncooked Vermicelli broken into peices
  • 2 cups diced cooked Turkey or Chicken
  • 1 can Italian tomatoes 16 0z.} undrained
  • 1 can {14 0z chicken broth {I use swansons}
  • 3/4 cup Picante sauce
  • 1 tablespoon ground cumin
  • 1 Large green bell pepper cut into short thin strips
  • 1/2 cup (2 0z.) shredded cheese
  • 1/4 cup chopped Cilantro {Optional}
  • May add additional picante sauce.

Directions
  1. In 12 inch skillet cook and stir onions and garlic in oil over medium heat 2 minutes;ADD PASTA cook ans stir 2 minutes
  2. STIR IN turkey tomatoes with juice, add brot 3/4 cup picante sauce and cumin
  3. Simmer stirring ocassionally 3 minutes
  4. ADD GREEN PEPPER
  5. contine to simmer untill pasta is tender most of the liquid is absorbed 4-5 minutes
  6. Sprinkle with cheese and Cilantro
  7. serve with additional picante sauce and garnish if desired
