TURKEY SKILLET

- 2 large onions coarsley chopped{2 cups} shopping list
- 2 cloves minced garlic shopping list
- 1/4 cup vegetable oil shopping list
- 10 oz. uncooked vermicelli broken into peices shopping list
- 2 cups diced cooked turkey or chicken shopping list
- 1 can Italian tomatoes 16 0z.} undrained shopping list
- 1 can {14 0z chicken broth {I use swansons} shopping list
- 3/4 cup picante sauce shopping list
- 1 tablespoon ground cumin shopping list
- 1 Large green bell pepper cut into short thin strips shopping list
- 1/2 cup (2 0z.) shredded cheese shopping list
- 1/4 cup chopped cilantro {Optional} shopping list
- May add additional picante sauce. shopping list
How to make it
- In 12 inch skillet cook and stir onions and garlic in oil over medium heat 2 minutes;ADD PASTA cook ans stir 2 minutes
- STIR IN turkey tomatoes with juice, add brot 3/4 cup picante sauce and cumin
- Simmer stirring ocassionally 3 minutes
- ADD GREEN PEPPER
- contine to simmer untill pasta is tender most of the liquid is absorbed 4-5 minutes
- Sprinkle with cheese and Cilantro
- serve with additional picante sauce and garnish if desired
