Lemon And Saltana Cookies

- 350g - 12oz plain flour shopping list
- 1/2tsp baking powder shopping list
- 1/2 tsp bicarbonate of soda shopping list
- 140g - 5oz butter cut into pieces shopping list
- 175g - 6oz caster sugar shopping list
- 85g - 3oz sultanas shopping list
- 100g - 4oz lemon curd shopping list
- 2 beaten eggs shopping list
- FOR THE icing shopping list
- 100g - 4oz sifted icing sugar shopping list
- 2 tblsp fresh lemon juice shopping list
How to make it
- Preheat oven to 200C gas 6
- butter 3 baking sheets
- sift flour baking powder, soda and salt into a bowl
- add butter and rub in with your fingers
- till mix resembles crumbs
- stir in sugar and sultanas
- add lemon curd and eggs and mix into a soft dough
- shape into 30 balls
- leave plenty of space for spreading
- slightly flatten tops
- bake for 12 -15 min until risen and lightly golden
- leave to cool for 1 min on the baking sheets before transferring to wire wrack to cool completely
- blend the icing sugar and lemon juice and drizzle over the cookies
