Ingredients

How to make it

  • Preheat oven to 200C gas 6
  • butter 3 baking sheets
  • sift flour baking powder, soda and salt into a bowl
  • add butter and rub in with your fingers
  • till mix resembles crumbs
  • stir in sugar and sultanas
  • add lemon curd and eggs and mix into a soft dough
  • shape into 30 balls
  • leave plenty of space for spreading
  • slightly flatten tops
  • bake for 12 -15 min until risen and lightly golden
  • leave to cool for 1 min on the baking sheets before transferring to wire wrack to cool completely
  • blend the icing sugar and lemon juice and drizzle over the cookies

    These sound just scrumptious. In fact, as a teen, I made a lemon and raisin criss-cross cookie. Yum! But the flavor came from extract and the criss-cross is made by the tines of a fork!
