How to make it

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place chicken in a roasting pan.
  • Season generously, inside and out with salt, pepper and onion powder.
  • Place 3 tablespoons margarine in chicken cavity.
  • Arrange pats of remaining margarine on chicken's exterior.
  • Cut celery into 3 or 4 pieces and place in chicken cavity.
  • Bake, uncovered, for 1 hour and 15 minutes OR to 180 degrees.
  • Remove from heat.
  • Baste with melted margarine and drippings.
  • Cover with aluminum foil and allow to rest for 30 minutes.
  • Carve and serve.
