Carmelized Onion Shitake Soup With Gruyere Blue Cheese Toasts

- Soup shopping list
- 1 Tbl olive oil shopping list
- 8 C vertically sliced yellow onion (about 2 lbs) shopping list
- 5 C sliced shitake caps (about 10 oz whole) shopping list
- 4 garlic cloves, minced shopping list
- 3 thyme sprigs shopping list
- 1/2 C dry white wine shopping list
- 1 (14 oz) can fat free, low sodium chicken broth shopping list
- 1 (14 oz) can fat free, low sodium beef broth shopping list
- 1/2 tsp salt shopping list
- 1/2 tsp pepper shopping list
- toasts shopping list
- 12, 1/2 inch thick slices french baguette, toasted shopping list
- 1/4 C (1 oz) gruyere shopping list
- 1/4 C ( 1 oz0 crumbled gorgonzola shopping list
- 1/2 tsp finely chopped fresh thyme or 1/4 tsp dried shopping list
How to make it
- Soup
- Heat oil in a large pan over medium high
- Add onion to pan; saute 15 mins over medium low or until tender and a deep golden brown(about 40 minutes), stirring occasionally
- Increase heat to medium
- Add mushrooms to pan; cook 10 mins. or until tender, stirring frequently
- Increase heat to medium high
- Stir in garlic and thyme sprigs; cook 2 minutes or until most of the liquid evaporates
- Add broth to pan; bring to simmer
- Reduce heat and simmer 45 minutes
- Stir in salt and pepper and discard thyme sprigs
- Preheat broiler
- Arrange bread slices in a singl;e layer on a baking pan
- Top each with 1 tsp of both cheeses
- Broil 2 minutes or until cheese is melted
- Sprinkle thyme over cheese
- Ladle about 1 cup soup into each of 6 bowls; top each serving with 2 toasts
