How to make it

  • Soup
  • Heat oil in a large pan over medium high
  • Add onion to pan; saute 15 mins over medium low or until tender and a deep golden brown(about 40 minutes), stirring occasionally
  • Increase heat to medium
  • Add mushrooms to pan; cook 10 mins. or until tender, stirring frequently
  • Increase heat to medium high
  • Stir in garlic and thyme sprigs; cook 2 minutes or until most of the liquid evaporates
  • Add broth to pan; bring to simmer
  • Reduce heat and simmer 45 minutes
  • Stir in salt and pepper and discard thyme sprigs
  • Preheat broiler
  • Arrange bread slices in a singl;e layer on a baking pan
  • Top each with 1 tsp of both cheeses
  • Broil 2 minutes or until cheese is melted
  • Sprinkle thyme over cheese
  • Ladle about 1 cup soup into each of 6 bowls; top each serving with 2 toasts
