The Second Ave Deli Matzoh Balls

- 1 Tbs salt plus 1/4 tsp salt shopping list
- 4 large eggs shopping list
- 1/3 cup schmaltz ( rendered chicken fat ) shopping list
- 1/4 tsp pepper shopping list
- 1 Tbs baking powder shopping list
- 1 1/3 cups matzoh meal shopping list
How to make it
- Fill a stockpot 3/4 full of water.
- Add the tbs salt and bring to a rapid boil
- While water is boiling, crack eggs into a bowl and beat well.
- Beat in the schmaltz, 1/4 tsp salt, pepper, and baking powder.
- Slowly fold in the matzoh meal and lastly beat mixture vigorously until completely blended.
- Wet hands, folding mixture in your palms and shape 1 1/4 inches in diameter ( they will double in size when cooked )
- Gently place the balls in the boiling water and reduce heat to a simmer. \
- Cover and cook about 25 minutes.
- Remove with a slotted spoon and place 1 or 2 in a bowl of soup
