Spring Greens With Beets And Goat Cheese Recipe
This is a wonderful salad . I don't care for goat cheese so have used feta and also blue cheese.

Ingredients
  • 2/3c pecan halves
  • 3 Tbs balsamic vinegar
  • 1 Tbs water
  • 1 Tbs sugar
  • 1/4c olive oil
  • 2 Tbs maple syrup
  • 1 tsp. whole grain mustard
  • 1/8 tsp salt 1 pkg. (5oz) spring mix salad greens
  • 1 can (141/2oz) sliced beets
  • 1c crumbled goat cheese(or feta ,or blue)

Directions
  1. In large, heavy skillet.cook the pecans,1 Tbs vinegar and water over med. heat until nuts are toasted,about 4 mins. Sprinkle with sugar. Cook and stir for 2-4 mins pr until sugar is melted. Spread on foil to cool.
  2. In small bowl,combine the oil,syrup,mustard,salt and remaining vinegar. Refrigerate till serving
  3. In a large bowl,combine salad greens and dressing;toss to coat. Divide among eight salad plates. Top with beets,goat cheese and glazed pecans.
