Spring Greens with Beets and Goat Cheese

- 2/3c pecan halves shopping list
- 3 Tbs balsamic vinegar shopping list
- 1 Tbs water shopping list
- 1 Tbs sugar shopping list
- 1/4c olive oil shopping list
- 2 Tbs maple syrup shopping list
- 1 tsp. whole grain mustard shopping list
- 1/8 tsp salt 1 pkg. (5oz) spring mix salad greens shopping list
- 1 can (141/2oz) sliced beets shopping list
- 1c crumbled goat cheese(or feta ,or blue) shopping list
How to make it
- In large, heavy skillet.cook the pecans,1 Tbs vinegar and water over med. heat until nuts are toasted,about 4 mins. Sprinkle with sugar. Cook and stir for 2-4 mins pr until sugar is melted. Spread on foil to cool.
- In small bowl,combine the oil,syrup,mustard,salt and remaining vinegar. Refrigerate till serving
- In a large bowl,combine salad greens and dressing;toss to coat. Divide among eight salad plates. Top with beets,goat cheese and glazed pecans.
