Ingredients

How to make it

  • Pour boiling water over tomatoes, leave for 1-2 minutes then place into iced water. Peel and dice the tomatoes.
  • Cut the cucumber in half length-ways. Scoop out the seeds and discard, then dice the cucumber.
  • Combine the tomatoes and cucumber in a bowl with the remaining ingredients.
  • Cover and store in the fridge.
  • NOTES: If using as a dip, serve with carrot and celery sticks, etc. If using as a sauce, dollop over barbecued meats salads and roll up in a wrap.

    I believe you should peel the cucumber first and then scoop out the seeds and then dice finely. But I have had a similar recipe and it is really good, not only with lamb but roasted beef too!
