Ingredients
  • 2 medium tomatoes
  • 2 cloves garlic, crushed
  • 1 lebanese cucumber
  • 1 Tbsp olive oil
  • 250g natural Greek yoghurt
  • 1 Tbsp lemon juice

Directions
  1. Pour boiling water over tomatoes, leave for 1-2 minutes then place into iced water. Peel and dice the tomatoes.
  2. Cut the cucumber in half length-ways. Scoop out the seeds and discard, then dice the cucumber.
  3. Combine the tomatoes and cucumber in a bowl with the remaining ingredients.
  4. Cover and store in the fridge.
  5. NOTES: If using as a dip, serve with carrot and celery sticks, etc. If using as a sauce, dollop over barbecued meats salads and roll up in a wrap.

I believe you should peel the cucumber first and then scoop out the seeds and then dice finely. But I have had a similar recipe and it is really good, not only with lamb but roasted beef too!


Love tzatziki and this one sounds great with the addition of tomato!


I'm lactose-intolerant, but yogurt never bothers me, so this is PERFECT! Thanks for a recipe I'll use over and over.
