Tomato Tzatziki

- 2 medium tomatoes shopping list
- 2 cloves garlic, crushed shopping list
- 1 lebanese cucumber shopping list
- 1 Tbsp olive oil shopping list
- 250g natural Greek yoghurt shopping list
- 1 Tbsp lemon juice shopping list
How to make it
- Pour boiling water over tomatoes, leave for 1-2 minutes then place into iced water. Peel and dice the tomatoes.
- Cut the cucumber in half length-ways. Scoop out the seeds and discard, then dice the cucumber.
- Combine the tomatoes and cucumber in a bowl with the remaining ingredients.
- Cover and store in the fridge.
- NOTES: If using as a dip, serve with carrot and celery sticks, etc. If using as a sauce, dollop over barbecued meats salads and roll up in a wrap.
