Cornish Hen Recipe
Yet again, thank you Patricia Telesco. This is a sweet glazed version of the classic Cornish Hen.

Ingredients
  • 3 Hens (1.5 Lb each)
  • 2T Butter
  • 1/2 c Orange Juice
  • 1T Honey
  • 1T Brown Sugar
  • 1/2 t Salt
  • 1/2 t Sage
  • 1/2 t Rosemary
  • 1T Cognac
  • 4 Lrg Oranges
  • 2T Butter
  • 1/4 c Brown Sugar
  • 1T Honey
  • 1/4c White Wine

Directions
  1. Preheat Oven to 350 F
  2. Place hens on rack in roasting pan, breast up.
  3. Rub with some butter then roast uncovered for 30 minutes.
  4. Mix the first 8 ingredients in a small sauce pan.
  5. Heat on low until the butter melts.
  6. Use the sauce to baste hens frequently.
  7. Continue to roast for 45 minutes.
  8. Meanwhile, remove ends of oranges and slice 8 times.
  9. Mix remaining ingredients in medium sauce pan.
  10. Add oranges to pan and simmer until oranges are glazed.(about 25 minutes)
  11. To serve: split hens along backbone and garnish each half with 6 orange slices.

I love Cornish Hens. I have made them in about 50 different ways and never had one turn out bad. This looks like a "fancy" way. I think I'll have to try this one out on company some evening. High 5....
