How to make it

  • Preheat Oven to 350 F
  • Place hens on rack in roasting pan, breast up.
  • Rub with some butter then roast uncovered for 30 minutes.
  • Mix the first 8 ingredients in a small sauce pan.
  • Heat on low until the butter melts.
  • Use the sauce to baste hens frequently.
  • Continue to roast for 45 minutes.
  • Meanwhile, remove ends of oranges and slice 8 times.
  • Mix remaining ingredients in medium sauce pan.
  • Add oranges to pan and simmer until oranges are glazed.(about 25 minutes)
  • To serve: split hens along backbone and garnish each half with 6 orange slices.

    I love Cornish Hens. I have made them in about 50 different ways and never had one turn out bad. This looks like a "fancy" way. I think I'll have to try this one out on company some evening. High 5....
