How to make it

  • 1) Heat oil in a large pot over medium heat. Add chopped onion and carrots to pan. Cook 10 minutes, stirring frequently, add salt, pepper and ginger.
  • 2) Add 2 cups water and broth to pan, bring to a boil. Cover and reduce heat. Let simmer for about 25 min until carrots are tender. Remove from heat and let cool.
  • Place half of carrots and 1 tablespoon cream in food processor, blender or use stick blender. Process or blend for 20 seconds or until smooth. Pour pureed mixture into a large bowl. Repeat procedure with remaining carrot mixture to pan. Cook over medium heat until thoroughly heated.
  • 3) Serve-Eat-And Enjoy
