Bedstemors Carrot Soup

- 1 tablespoon extra virgin olive oil shopping list
- 2 cups chopped vidalia onion shopping list
- 2 pounds carrots, cut into 1/2 inch pieces shopping list
- 1 teaspoon fine sea salt shopping list
- 1/2 teaspoon fresh ground pepper (Black) shopping list
- quick sprinkle of ground ginger shopping list
- 2 cups water shopping list
- 2 cups chicken broth (homemade is best) shopping list
- 2 tablespoons heavy cream, divided shopping list
How to make it
- 1) Heat oil in a large pot over medium heat. Add chopped onion and carrots to pan. Cook 10 minutes, stirring frequently, add salt, pepper and ginger.
- 2) Add 2 cups water and broth to pan, bring to a boil. Cover and reduce heat. Let simmer for about 25 min until carrots are tender. Remove from heat and let cool.
- Place half of carrots and 1 tablespoon cream in food processor, blender or use stick blender. Process or blend for 20 seconds or until smooth. Pour pureed mixture into a large bowl. Repeat procedure with remaining carrot mixture to pan. Cook over medium heat until thoroughly heated.
- 3) Serve-Eat-And Enjoy

This is an amazing recipe. It has ginger in it, gotta be good. Grandma always knows best for sure!! Looking forward to making this and enjoying it's uniqueness. High Five for a great post!!!
