Hawaiian Mixed Grill W Coconut Rice Recipe
This dish is a favorite and will certainly brighten up any day. You can make it as spicy (or not) as you'd like.

Ingredients
  • 1 lb boneless skinless chicken breast
  • 1/2 lb beef OR pork...any cut
  • 3 tbsp olive oil
  • 1/2 peeled and cored pineapple
  • 1 red bell pepper
  • 1 small onion
  • 1 bunch green onions
  • 3-5 serrano peppers, or any other spicy peppers you prefer or have on hand
  • 3 tbsp soy sauce
  • 1/2 cup orange juice
  • 1.5 cups Jasmine rice
  • 1 1/2 cups coconut milk
  • 1 1/2 cups water

Directions
  1. Start with the meat. Cut into small, almost bite sized peices.
  2. Combine 2 tbsp oil, green onions, serrano peppers, 1/2 of the pineapple, soy sauce, and orange juice in blender and puree.
  3. Place meat in mixture and marinate for about 30 minutes in the refridgerator.
  4. Meanwhile, cut the remaining pineapple and red bell pepper into bite sized pieces. Dice the onion.
  5. Take meat out of marinade and saute in some of the olive oil. When finished cooking, set aside and saute onions, red bell pepper, and pineapple.
  6. Add meat to veggie mixture and warm through, adjusting seasoning as needed with salt, pepper and/or soy sauce.
  7. Serve over coconut rice and garnish with green onions.
  8. Coconut rice: cook jasmine rice as directed, substituting 1/2 of the water required for cooking with the coconut milk.
