Hawaiian Mixed Grill w Coconut Rice

- 1 lb boneless skinless chicken breast shopping list
- 1/2 lb beef OR pork...any cut shopping list
- 3 tbsp olive oil shopping list
- 1/2 peeled and cored pineapple shopping list
- 1 red bell pepper shopping list
- 1 small onion shopping list
- 1 bunch green onions shopping list
- 3-5 serrano peppers, or any other spicy peppers you prefer or have on hand shopping list
- 3 tbsp soy sauce shopping list
- 1/2 cup orange juice shopping list
- 1.5 cups jasmine rice shopping list
- 1 1/2 cups coconut milk shopping list
- 1 1/2 cups water shopping list
How to make it
- Start with the meat. Cut into small, almost bite sized peices.
- Combine 2 tbsp oil, green onions, serrano peppers, 1/2 of the pineapple, soy sauce, and orange juice in blender and puree.
- Place meat in mixture and marinate for about 30 minutes in the refridgerator.
- Meanwhile, cut the remaining pineapple and red bell pepper into bite sized pieces. Dice the onion.
- Take meat out of marinade and saute in some of the olive oil. When finished cooking, set aside and saute onions, red bell pepper, and pineapple.
- Add meat to veggie mixture and warm through, adjusting seasoning as needed with salt, pepper and/or soy sauce.
- Serve over coconut rice and garnish with green onions.
- Coconut rice: cook jasmine rice as directed, substituting 1/2 of the water required for cooking with the coconut milk.
