How to make it

  • Start with the meat. Cut into small, almost bite sized peices.
  • Combine 2 tbsp oil, green onions, serrano peppers, 1/2 of the pineapple, soy sauce, and orange juice in blender and puree.
  • Place meat in mixture and marinate for about 30 minutes in the refridgerator.
  • Meanwhile, cut the remaining pineapple and red bell pepper into bite sized pieces. Dice the onion.
  • Take meat out of marinade and saute in some of the olive oil. When finished cooking, set aside and saute onions, red bell pepper, and pineapple.
  • Add meat to veggie mixture and warm through, adjusting seasoning as needed with salt, pepper and/or soy sauce.
  • Serve over coconut rice and garnish with green onions.
  • Coconut rice: cook jasmine rice as directed, substituting 1/2 of the water required for cooking with the coconut milk.
