Kafta mixture is basically finely ground meat, but unlike Kibbi, it is not made entirely of lean meat. Kafta may be made from wither Lamb or Beef. Ordinary hamburger/ground meat is also quite satisfactory.

Ingredients
  • Makes 2 lbs
  • 2 lbs finely ground beef or lamb or combination
  • 1 cup finely chopped parsley
  • 1 tsp Lebanese mixed spice
  • 1 cup finely chopped or ground onion
  • 3 tsp salt
  • 1/2 tsp black pepper

Directions
  1. Mix all the ingredients together in a large bowl and knead well.
  2. Place mixture through a fine blade of a grinder twice or alternately knead well for another 20 minutes. Occasionally adding small quantities of iced water.
  3. Use this mixture for the Kafta Meat Loaf, Kafta on Skewers, and Mi'leeyah (fried meat patties) recipes.

Very interesting. I am not sure I have ever tasted foods with a Lebanese influence. But, I'll be trying it for sure. Sorry can't high five it until I try. =)
