Cilantro Lime Soup

- 2 Tbs olive oil shopping list
- 1 onion,chopped shopping list
- 2 garlic cloves,minced shopping list
- 1 Tbs chili powder shopping list
- 2 skinless boneless chicken breast halves,cut in 3/4" pieces shopping list
- 5 cups low-sodium canned chicken broth shopping list
- 1 cup fresh or frozen corn kernals shopping list
- 1 cup chopped,seeded tomatoes shopping list
- 1/2 bunch fresh cilantro sprigs, tied together with kitchen twine shopping list
- 1/4 cup chopped fresh cilantro shopping list
- 1/4c fresh lime juice shopping list
- sour cream shopping list
How to make it
- Heat oil in heavy large saucepan over med-high heat. Add onion and garlic;saute until slightly softened,about 3 mins. Add chili powder;stir 1 min. Add chicken;stir 2 mins. Add broth,corn,tomatoes and 1/2 bunch cilantro sprigs to saucepan;bring to a boil. Reduce heat and simmer until chicken is cooked through ,about 10 mins. Discard cilantro sprig.(This can be done 1 day ahead,Chill. Bring to a simmer before continuing.)
- Add chopped cilantro and lime juice to soup. Season with salt and pepper. Garnish with sour cream.

OK, I made this for lunch today. Hubby had some cilantro in his garden and it got put to a great use! Very good soup! I added a little extra lime juice in the end, I really loved the zesty flavor it gave the soup. Took a picture, the soup is now off...more
