Peach Blackberry Crostada Recipe
This is my version of peach blackberry crostada. We enjoy it.

Ingredients
  • 1 prepared refrigerated pie crust(at room temp for 15 mins)
  • 1/4c sugar
  • 1Tbs. cornstarch
  • 3 medium peaches,cut into 12 slices
  • 1 to 11/2 pts. blackberries
  • 1/2 tsp vanilla
  • 1 egg ,beaten,for glaze
  • raw sugar

Directions
  1. Combine peaches and blackberries in a medium bowl,sprinkle with sugar and cornstarch. Let stand till juices are released(about 30 mins),stirring occasionally. Add vanilla
  2. Place pie crust on a parchment -lined baking sheet or in a pie pan.Preheat oven to 375. Spoon fruit into center. Reserve juices. Arrange fruit in even layer on dough,leaving a 2" border of dough to lift and pinch. Pinch every 2" to form a standing border. Fold border down over fruit(center of fruit remains uncivered). Brush folded border with egg glaze,sprinkle with raw sugar..
  3. Pour remaining fruit juices in center of tart.
  4. Place tart in oven. Bake till crust is brown and fruit filling bubbling,about 50 mins.
  5. Remove tart from oven. Slide large metal spatula under tart to loosen. Slide tart onto rack. Serve with ice cream or Vanilla Creme Fraiche(recipe posted.
