Peach Blackberry Crostada

- 1 prepared refrigerated pie crust(at room temp for 15 mins) shopping list
- 1/4c sugar shopping list
- 1Tbs. cornstarch shopping list
- 3 medium peaches,cut into 12 slices shopping list
- 1 to 11/2 pts. blackberries shopping list
- 1/2 tsp vanilla shopping list
- 1 egg ,beaten,for glaze shopping list
- raw sugar shopping list
How to make it
- Combine peaches and blackberries in a medium bowl,sprinkle with sugar and cornstarch. Let stand till juices are released(about 30 mins),stirring occasionally. Add vanilla
- Place pie crust on a parchment -lined baking sheet or in a pie pan.Preheat oven to 375. Spoon fruit into center. Reserve juices. Arrange fruit in even layer on dough,leaving a 2" border of dough to lift and pinch. Pinch every 2" to form a standing border. Fold border down over fruit(center of fruit remains uncivered). Brush folded border with egg glaze,sprinkle with raw sugar..
- Pour remaining fruit juices in center of tart.
- Place tart in oven. Bake till crust is brown and fruit filling bubbling,about 50 mins.
- Remove tart from oven. Slide large metal spatula under tart to loosen. Slide tart onto rack. Serve with ice cream or Vanilla Creme Fraiche(recipe posted.
