How to make it

  • Combine peaches and blackberries in a medium bowl,sprinkle with sugar and cornstarch. Let stand till juices are released(about 30 mins),stirring occasionally. Add vanilla
  • Place pie crust on a parchment -lined baking sheet or in a pie pan.Preheat oven to 375. Spoon fruit into center. Reserve juices. Arrange fruit in even layer on dough,leaving a 2" border of dough to lift and pinch. Pinch every 2" to form a standing border. Fold border down over fruit(center of fruit remains uncivered). Brush folded border with egg glaze,sprinkle with raw sugar..
  • Pour remaining fruit juices in center of tart.
  • Place tart in oven. Bake till crust is brown and fruit filling bubbling,about 50 mins.
  • Remove tart from oven. Slide large metal spatula under tart to loosen. Slide tart onto rack. Serve with ice cream or Vanilla Creme Fraiche(recipe posted.

    Wynne suggested I make something like this and I found your recipe. Defintely making this tomorrow. Need to use up frozen fruit and have an extra pie crust left from Easter. Thanks Pat - you always have the best recipes!
