Worker Man Quesedillas

- 3 T margarine shopping list
- Drizzle EVOO shopping list
- 1/2 onion, chopped shopping list
- 1/2 red pepper, chopped shopping list
- 3 handsful frozen, choppeed spinach (Optional. I say handsful cuz I find the bag of frozen spinach easier to deal with and has much less water, the water will cook away, no need to "squeeze out" BUT, you can defrost a box and squeeze water out if that's what you have). shopping list
- seasoned salt shopping list
- garlic pepper shopping list
- taco seasoning about 2 T shopping list
- 1 t chili powder shopping list
- 2 dashes red pepper flakes (or more to taste) shopping list
- 2 dashes hot sauce (Optional) shopping list
- squeeze from a lime wedge or two, whatever I have on hand (when making the chicken or turkey version) shopping list
- 1 small can black olives, drained shopping list
- small can green chiles, drained shopping list
- white wine Worcestershire, OR Lea & Perrins chicken marinade (same thing - sold by the worcestershire sauce)** shopping list
- 2 t chopped garlic shopping list
- 3 handsful chopped cooked turkey or chicken** shopping list
- 2 t ranch seasoining shopping list
- 1/4 c grated parmesan shopping list
- 1/2 8 oz tub cream cheese (optional) shopping list
- 1/2 bag your favorite shredded cheese (I used colby Jack - could be mexican, mozzerella, pepper jack, etc) shopping list
- 1 medium tomato, chopped shopping list
- 4 8" flour tortillas shopping list
- George Foreman Grill shopping list
- DIPPING SAUCE of your choice: Sourcream, salsa, guacamole, Ranch shopping list
- ** OR used leftover steak or crumbled hamburger, and brown worcestershire shopping list
- ***OR used salmon and havarti cheese shopping list
How to make it
- Drizzle a large non-stick skillet with EVOO and add the 3 T margarine
- Saute onion and red pepper unjtio they begin getting soft
- Add chiles
- Add spinach
- When spinach is hot and incorporated with the veggies, sitr in all sesonings, lime, meat, olives and mushrooms
- Allow to cook a few minutesto reduce any liquid from the spinach
- Add parmesan and stir well
- Remove from heat, stir in cream cheese and chopped tomaotes
- Lay a tortilla on the foreman grill
- Sprinkle with shredded cheese
- Top with 1/2 the filling
- Top with more shredded cheese
- Place a 2nd tortilla on top
- Close lid and cook about 3 minutes, until lightly golden and crispy
- Cut into wedges with a pizza cutter and serve
- Can cut each quesedilla into 4 pieces for a meal for 2, or, cut into smaller wedges for an appetizer.
