Pear Ice Cream Recipe
PEAR ICE CREAM This recipe came from an estate sale. I obtained it when I purchased the family collection from the Greene Estate in Mesquite, Texas in 1991.

Ingredients
  • 1-1/2 cups whipping cream
  • 3/4 cup granulated sugar
  • 4 medium egg yolks lightly beaten
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon pear liqueur
  • 1-1/2 pounds ripe pears
  • 1/4 cup water

Directions
  1. In suitably sized saucepan over medium heat combine 1 cup whipping cream with the sugar.
  2. Cook 5 minutes then whisking constantly gradually pour mixture over egg yolks in a bowl.
  3. Return mixture to saucepan and cook over medium low heat 12 minutes.
  4. Stir in remaining whipping cream, vanilla and pear liqueur.
  5. Meanwhile peel core and coarsely chop the ripe pears.
  6. In another saucepan combine pears with 1/4 cup water then cook over medium heat 5 minutes.
  7. In a food processor or blender puree pears with the liquid then stir purée into custard.
  8. Place waxed paper directly on surface and refrigerate until completely chilled.
  9. Freeze in ice cream maker according to manufacturer's directions.
