Chili Con Carne Recipe
This is a really easy dish to make, and it is a husband pleaser!

Ingredients
  • 3 lbs beef roast or cut of your choice trimmed and cubed
  • 2 cans of chili beans
  • 1 can of condensed French onion soup OR beef broth
  • 2 medium tomatoes de-seeded and diced
  • 1 large white onion chopped
  • 2 garlic cloves minced
  • 2 tbsp diced jalapeno (from a can or jar)
  • 2 tsp of juice from the jalapeno can or jar (optional)
  • 2 tbsp brown sugar
  • 1 tbsp chili powder (more if you like)
  • 1 tbsp cumin
  • 1 tsp oregano (Mexican if you have it)
  • 3 bay leaves
  • ½ tsp cayenne pepper
  • a couple dashes of Tobasco® (optional)
  • salt
  • 2 tbsp cornstarch mixed with 2 tbsp water

Directions
  1. Brown the meat in a Dutch oven.
  2. Set meat aside.
  3. Saute onions for 5 minutes.
  4. Add jalapeno and garlic and sauté another minute or two.
  5. Add soup and 1 can of water.
  6. Add beef, seasonings, and jalapeno juice.
  7. Simmer for 40 minutes.
  8. Add tomatoes, beans, and cornstarch slurry.
  9. Simmer another 20 minutes until thickened.
  10. Top with your favorite garnishes and enjoy!

Have you tried using coarse grind hamburger or just regular hamburger? The ingredients read well. JJ


This is similar to the chili I make - you can use stew meat also. (Or cubed pork) Sounds delicious, Sandy - I'd make it right now if I had thawed the beef! Maybe tomorrow. . . ;')
