Chili Con Carne

- 3 lbs beef roast or cut of your choice trimmed and cubed shopping list
- 2 cans of chili beans shopping list
- 1 can of condensed French onion soup OR beef broth shopping list
- 2 medium tomatoes de-seeded and diced shopping list
- 1 large white onion chopped shopping list
- 2 garlic cloves minced shopping list
- 2 tbsp diced jalapeno (from a can or jar) shopping list
- 2 tsp of juice from the jalapeno can or jar (optional) shopping list
- 2 tbsp brown sugar shopping list
- 1 tbsp chili powder (more if you like) shopping list
- 1 tbsp cumin shopping list
- 1 tsp oregano (Mexican if you have it) shopping list
- 3 bay leaves shopping list
- ½ tsp cayenne pepper shopping list
- a couple dashes of Tobasco® (optional) shopping list
- salt shopping list
- 2 tbsp cornstarch mixed with 2 tbsp water shopping list
How to make it
- Brown the meat in a Dutch oven.
- Set meat aside.
- Saute onions for 5 minutes.
- Add jalapeno and garlic and sauté another minute or two.
- Add soup and 1 can of water.
- Add beef, seasonings, and jalapeno juice.
- Simmer for 40 minutes.
- Add tomatoes, beans, and cornstarch slurry.
- Simmer another 20 minutes until thickened.
- Top with your favorite garnishes and enjoy!
