Country Dumplings Recipe
A nice comfort food , that my family just loves. My version of the dumplings you get at Cracker barrel.

Ingredients
  • 2 boneless skinless chicken breast
  • Dumpling:
  • 2 cups flour
  • 2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 4 tablspoons vegetable oil
  • 8 cups water( used to cook the chicken n dumplings in, don't add to other dumpling ingredients)
  • 3 tablspoons chicken soup base (or can use chicken bouilon cubes)
  • Dumpling Sauce:
  • 6 tablespoons Butter
  • 8 tablespoons flour
  • 1/2 teaspoon salt
  • 2 cups milk
  • 1/2 teaspoon sugar
  • 1- 11/2 cups dumpling cooking liquid

Directions
  1. Add 8 cups water to large pan n add chicken base and chicken, Cook till chicken is done, Remove chicken n set aside.
  2. Dumplings:
  3. Mix all ingredients, blend well .
  4. Turn out onto floured surface,knead 4 or 5 times.
  5. Diviide dough in 2 parts.
  6. Roll out 1st part to 1/8" thickness.
  7. Cut into 1" x 1/2" strips.
  8. Bring the chicken water to a boil and add dumplings,
  9. Cook till almost done (aprox 10 minutes) strain n set aside.
  10. As 1st batch of dumplings cooking roll out out 2nd part n cut as before. Cook like 1st batch.
  11. Dump dumpling water into a bowl to use in sauce.
  12. Dumpling Sauce:
  13. Place butter in the large pan you cooked dumplings in, melt,add salt and flour.
  14. Mix sugar with milk,add to flour mixture,stirring constantly with a whisk till smooth and thick.
  15. Lower heat to low
  16. Shredd or cube chicken and add to sauce.
  17. Add the dumplings to sauce.
  18. Add about 1 cup of dumpling cooking liquid to sauce.
  19. Stir gently.
  20. Simmer dumplings on low heat till blended and dumplings are done.
  21. Can add more dumpling liquid as needed.

Love Cracker Barrel's chicken and dumplings! This recipe sounds deeeelicious!


My ex-mother-in-law (from South Carolina) was a wonderful cook. She made something similar to this & I really enjoyed it. I never knew how she made it. American cooking was so different from the English cooking I was used to back then in 1962. I can't wait to try it. It brings back memories of a very special lady who has been gone for a long time. What is dumpling cooking liquid and what is the amount that is needed? Recipe looks great.


Canzi the dumpling cooking liquid, is the broth that you cooked the dumpling's in. The water that the chicken n bouilon was cooked in, bout 1 cup is needed, but can add more depending how thick or thin you want your sauce.
