Make plenty and freeze, kids can pop them ine microwave for 1 minute, husband can pop it in the microwave at the office and you can pop it in the microwave and come back to Group Recipes. Serve right off the stove.

For convenience we brown and drain the sausage. Crack the eggs into a large bowl with 1 Tbs. milk for each egg and whip the HECK out of them until they have a lot of air in them. Stir in the cooked sausage and cheese. Pour into a greased baking dish and bake at 350 F for 20-30 minutes. Cut to size and roll them up. Like I said, its more for convenience and will not yeild the taste or texture of making everything separate.

We've been making a version of these for several months now. We make them on the weekend, wrap individually in plastic wrap, and freeze. Y'all are right - they are a great way for the kids to get a quick and hot breakfast. I've offered an alteration that we use as a convenience - but Km's version will have a more pleasing texture and taste. High 5.
