Make plenty and freeze, kids can pop them ine microwave for 1 minute, husband can pop it in the microwave at the office and you can pop it in the microwave and come back to Group Recipes. Serve right off the stove.

Ingredients
  • 1 lb of your favorite pork sausage
  • 5 eggs scrambled
  • 1 1/2 cups chedder or taco cheese
  • 1/4 cup salsa
  • 20 soft burrito shells
  • sour cream (optional)

Directions
  1. Place a roll of sausage in a fry pan and cook until done. Drain all the grease and add your scrambled eggs and cook till eggs are cook. Take pan off skillet, top with cheese and cover. Heat burrito shells in microwave for about 20 seconds, or until soft. Remove lid from pan, add salsa and fill burrito shells. Serve hot. Freeze remaining burritos and microwave on high for 1 minute when ready to reheat. Top with sour cream.

We've been making a version of these for several months now. We make them on the weekend, wrap individually in plastic wrap, and freeze. Y'all are right - they are a great way for the kids to get a quick and hot breakfast. I've offered an alteration that we use as a convenience - but Km's version will have a more pleasing texture and taste. High 5.

I also make these n freeze for later, I switch up the flavors, using bacon or ham.I've also switched can rotel for the salsa. Nice Post

Alterations


For convenience we brown and drain the sausage. Crack the eggs into a large bowl with 1 Tbs. milk for each egg and whip the HECK out of them until they have a lot of air in them. Stir in the cooked sausage and cheese. Pour into a greased baking dish and bake at 350 F for 20-30 minutes. Cut to size and roll them up. Like I said, its more for convenience and will not yeild the taste or texture of making everything separate.
