VIDALIA SWEET ONION CASSEROLE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Irwin Estate in Jacksonville, Texas in 1987.

Ingredients
  • 3 pounds Vidalia onions sliced
  • 1-1/2 sticks butter
  • 1 can cream of celery soup
  • 5 slices Swiss cheese
  • 1 teaspoon salt
  • 2 teaspoons freshly ground black pepper
  • 1/2 cup grated parmesan
  • 4 slices toasted bread cubed

Directions
  1. In skillet melt butter and add the onions.
  2. Stirring occasionally sauté until onions are tender then add soup and seasonings.
  3. Mix until well combined then buttered a rectangular casserole dish.
  4. Layer 1/2 of the onion mixture, Swiss cheese, remaining onions, bread and parmesan cheese.
  5. Bake at 350 for 35 minutes.
