Chicken Burrito Bake

- 4c shredded chicken(can be from rotisserie chicken) shopping list
- 1c store-bought med-hot green tomatillo salsa plus more for serving shopping list
- 1 pkg.(8oz;2 cups)pre-shredded cheese blend for tacos shopping list
- 8 to 10 flour tortillas(8") shopping list
- 2 containers (10 oz each) refrigerated Alfrado-style pasta sauce shopping list
- shredded lettuce,avocado cubes and chopped fresh cilantro leaves,for serving. shopping list
How to make it
- Preheat oven to 375.
- Place chicken,tomatilla salsa, and 1/2 c of the cheese in a large mixing bowl. Stir till ingredients are well combined.
- Spoon 1/2 to 3/4c of the chicken mixture down the center of tortilla. Fold 1 edge of tortilla over the filling,then roll the tortilla to the other edge,creating a filled log. Carefully place the filled tortilla,seam side down, in a 9x13' glass or ceramic baking dish. Repeat with remaining tortillas and filling,placing burritos snugly side by side in baking dish. Place the pasta sauce and remaining 11/2 cups of cheese in the mixing bowl and stir to combine. Pour mixture over burritos.
- Bake until sauce bubbles,20 to 25 mins. Remove from oven and let cool 10 mins,then serve. Serve whole with sauce or cut into pieces. Serve burritos with more salsa,shredded lettuce,cubes of avocado and fresh cilantro leaves.
