Ingredients
  • 1 stick plus 2 Tbs unsalted butter
  • 5 oz milk chocolate chopped
  • 3 Tbs cake flour
  • 1/3 cup all purpose flour
  • 1/2 cup unsweetned cocoa powder
  • 1/2 tsp salt
  • 2 large eggs
  • 3/4 cup sugar
  • 2 tsp vanilla
  • ice cream to accompany ( optional )

Directions
  1. In saucepan over low heat, melt butter with 1/5th of chcolate.
  2. Mix flours, cocoa powder and salt
  3. Beat eggs with sugar until very thick and pale
  4. Then add and beat in the butter /chocolate mixture and vanilla
  5. Gradually beat into flour mixture.
  6. Stir in the remaing chopped chocolate
  7. Place mixture into 8 buttered and floured muffin tins.
  8. Bake in a 350F oven until risen and springy, about 22 minutes
  9. Let cool in pan 15mins and then remove to rack and let cool 15 minutes more.
  10. Serve warm with ice cream
  11. Note: the inside should have a soft and fluffy texture and they are supposed to be that way, with a crsipy, chewy outer edge
  12. May be stored airtight for 2 days
  13. Just rewarm before serving.
  14. Ice cream is the ideal garnish!
