Chicken Roll-Ups Recipe
This is a good one for freezing. Make half and freeze half for those busy times.

Ingredients
  • 8 boneless skinless chicken breast halves
  • 8 thin slices deli ham
  • 4 slices provolone cheese, halved
  • 2/3 cup seasoned bread crumbs
  • 1/2 cup grated Romano or Parm
  • 1/4 cup minced fresh parsley
  • 1/2 cup milk
  • cooking spray

Directions
  1. Flatten chicken to 1/4 inch thickness
  2. Place a slice of ham and half of a slice of provolone cheese on each piece of chicken
  3. Roll up from a short side and tuck in ends; secure with a toothpick
  4. In a shallow bowl, combine the crumbs, Romano and parsley
  5. Pour milk into another bowl
  6. Dip chicken rolls in milk, then roll in crumb mixture
  7. Wrap each of four chicken roll ups in plastic wrap; place in a large freezer bag
  8. Seal and freeze for up to 2 months
  9. Place remaining roll-ups, seam side down, on a greased baking sheet
  10. Spritz chicken with cooking spray
  11. Bake, uncovered, at 425 degrees for 25 minutes or until meat is no longer pink
  12. Remove toothpicks
  13. TO USE FROZEN CHICKEN
  14. Thaw in the refrigerator
  15. Unwrap roll-ups and place on a greased baking sheet
  16. Spritz with cooking spray
  17. Bake, uncovered, at 425 degrees for 30 minutes
