This recipe comes courtesy of a Jamaican Friend. I have tried them and they are all great and easy to make.

Ingredients
  • 1 1/2 conch meat (Lambie)
  • 1 Jamaican Scotch Bonnet pepper
  • 1 tbsp. salt
  • 1 green banana, cut into pieces
  • 1 chyote (Apple or Pear shaped fruit that have the flavor cross between a cucumber and potato.)
  • Fresh thyme
  • Black pepper
  • 1 West Indian yam
  • 3 scallions

Directions
  1. Boil conch meat until tender (2 hours).
  2. Pressure cooked (1 hour).
  3. When tender, add Jamaican hot pepper, green banana and chyote.
  4. Let boil for about 15 minutes, then add yam, scallions, salt, thyme and pepper to taste.
