Vegetable Gouda Cheesecake

- 1 cup breadcrumbs shopping list
- 1/4 cup plus 2 tbls. butter, melted shopping list
- 1/3 cup parmesan cheese, grated shopping list
- 3/4 tsp. cayenne pepper shopping list
- 3-8 oz. pkg. cream cheese, softened shopping list
- 1/2 cup whipping cream shopping list
- 1/4 tsp. salt shopping list
- 1/4 tsp. cayenne pepper shopping list
- 4 eggs shopping list
- 1 cup smoked gouda cheese, shredded shopping list
- 8 slices bacon, cooked and crumbled shopping list
- 1-10 oz. package frozen spinach, thawed and drained shopping list
- 1-4 oz. jar pimientos, drained shopping list
- 1/2 lb. mushrooms, chopped shopping list
- 1/4 cup scallions, chopped shopping list
- 2 tbls. butter, melted shopping list
- 1/4 tsp. pepper shopping list
- 1/8 tsp. salt shopping list
How to make it
- Preheat oven to 350
- In mixing bowl, add breadcrumbs, 1/4 cup plus 2 tbls. melted butter, Parmesan cheese and
- 3/4 tsp. cayenne pepper and stir well
- Press into bottom and halfway up sides of greased 9 inch spring form pan
- Bake 10 minutes and let cool completely
- Reduce heat to 325
- In mixing bowl, add cream cheese, whipping cream, salt, cayenne pepper and beat until smooth
- Add eggs, one at a time, beating at low speed until just blended
- Divide cream cheese mixture in half
- Add Gouda cheese and bacon to one half, mixing well
- Stir spinach and pimiento into other half
- Saute mushrooms and scallions in 2 tbls. butter until tender and liquid evaporates
- Stir in salt and pepper
- Pour spinach mixture into crust
- Top with mushroom mixture
- Pour bacon-cream cheese mixture over mushrooms
- Bake for 45-50 minutes or until set
- Turn oven off and open door partially leaving cheesecake in oven 1 hour
- Remove from pan
