An Island candy. You can use food coloring to creat a veriety of colors and add different extracts for a veriety of flavors. Can even dip them in chocolate or place nuts in the center of them..

Ingredients
  • 2 cups grated coconut
  • 1 1/2 cups of sugar
  • 1/2 cup of water
  • 2 tsp vanilla extract
  • 1 tsp cinnamon powder
  • 1/4 tsp baking powder

Directions
  1. Bring water to a boil and ad coconut.
  2. Cook for 5- 10 minutes and add sugar.
  3. Sit constantly and cook for additional 25 minutes until coconut hardens.
  4. Remove from heat and add remaining ingredients.
  5. Place spoonfuls on a plate or wax sheet and allow to cool and harden.
  6. ++++++++++++++++++++++++++++++++++++++++
  7. NOTE: You can roll and shape once it is cooled and firm. Them add what you like. Dip in chocolate or put nuts in the centers.
