How to make it

  • Preheat oven to 350.
  • Pat fish dry with paper towels then sprinkle with salt and pepper and place in baking dish.
  • Sprinkle with lemon peel and chives and dot with butter.
  • Bake 12 minutes.
  • While the fish bakes put 1/2" oil in a small saucepan set over high heat.
  • Pat capers dry with paper towels.
  • Add capers to hot oil and cook 2 minutes.
  • Immediately remove with a slotted spoon to paper towels.
  • Place fish on warm plates then divide the cooking juices among them and sprinkle with capers. Serve at once.

    This recipe is awesome! I love capers and never thought of frying them before, it really brings out the full flavor of the capers. I didn't use grated lemon peel but rather I used thinly sliced lemon slices over each fish filet.
