Bass With Tomato Cilantro Linguini Recipe
This is an awesome seafood recipe sure to please all who love fish. This is flavored well and just flakes when cut with a fork. Enjoy.

Ingredients
  • 2 tablespoons olive oil
  • 1-1/2 tablespoons fresh lime juice
  • 1 tablespoon drained capers
  • 4 small roma tomatoes seeded and chopped
  • 2 garlic cloves minced
  • 1/4 teaspoon cayenne pepper
  • 1/3 cup fresh cilantro leaves
  • 4 sea bass fillets
  • 1/4 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • Olive oil or cooking spray
  • 10 ounces fresh linguine

Directions
  1. In a large bowl stir together oil, lime juice, capers, tomatoes, garlic, red pepper and cilantro.
  2. Set aside.
  3. Remove and discard any skin from fish then rinse and pat dry.
  4. Cut fish into 4 serving pieces then season with salt and black pepper.
  5. Spray a wide nonstick frying pan with cooking spray and place over medium high heat.
  6. Add fish and cook turning once for 8 minutes.
  7. Meanwhile in a 6 quart pan cook linguine in 3 quarts boiling water for 2 minutes then drain well.
  8. Set 2 tablespoons of the tomato mixture aside then lightly mix remaining mixture with hot pasta.
  9. Divide pasta among 4 warm plates and top each serving with a piece of fish.
  10. Top fish evenly with reserved tomato mixture.
