Iowa Corn Relish Recipe
This is an old time recipe for corn relish that I have made for years. It is excellent with turkey, ham and roast pork. Recipe from Farm Journal.

Ingredients
  • 20 ears of corn
  • 1 cup green peppers ; chopped
  • 1 cup red peppers ; chopped
  • 1 1/4 cups onion ; chopped
  • 1 cup celery ; chopped
  • 1 1/2 cups sugar
  • 1 1/2 tablespoons mustard seed
  • 1 tablespoon salt
  • 1 teaspoon celery seed
  • 1/2 teaspoon turmeric
  • 2 2/3 cups vinegar
  • 2 cups water

Directions
  1. Cook corn in boiling water in large kettle 5 minutes.
  2. Plunge into cold water.
  3. Cut kernels from cobs, making 2 1/2 quarts cut corn.
  4. Combine corn and remaining ingredients in large kettle.
  5. Bring to boiling; reduce heat and simmer 20 minutes.
  6. Ladle mixture into 5 hot pint jars, filling to within 1/4-inch from top.
  7. Adjust lids.
  8. Process in boiling water bath 20 minutes. (Start to count the processing time when water returns to boiling.)
  9. Remove jars.
  10. Cool on wire racks 12 to 24 hours.
  11. Check jars for airtight seal.
  12. Makes 5 pints.

I love corn relish and can't wait to make this. It is a favorite with our garlic cheese spread. Mixed together on a crispy cracker it is the perfect blend of tart sweet and delcious.
