Iowa Corn Relish

- 20 ears of corn shopping list
- 1 cup green peppers ; chopped shopping list
- 1 cup red peppers ; chopped shopping list
- 1 1/4 cups onion ; chopped shopping list
- 1 cup celery ; chopped shopping list
- 1 1/2 cups sugar shopping list
- 1 1/2 tablespoons mustard seed shopping list
- 1 tablespoon salt shopping list
- 1 teaspoon celery seed shopping list
- 1/2 teaspoon turmeric shopping list
- 2 2/3 cups vinegar shopping list
- 2 cups water shopping list
How to make it
- Cook corn in boiling water in large kettle 5 minutes.
- Plunge into cold water.
- Cut kernels from cobs, making 2 1/2 quarts cut corn.
- Combine corn and remaining ingredients in large kettle.
- Bring to boiling; reduce heat and simmer 20 minutes.
- Ladle mixture into 5 hot pint jars, filling to within 1/4-inch from top.
- Adjust lids.
- Process in boiling water bath 20 minutes. (Start to count the processing time when water returns to boiling.)
- Remove jars.
- Cool on wire racks 12 to 24 hours.
- Check jars for airtight seal.
- Makes 5 pints.

I love corn relish and can't wait to make this. It is a favorite with our garlic cheese spread. Mixed together on a crispy cracker it is the perfect blend of tart sweet and delcious.
