How to make it

  • Cook corn in boiling water in large kettle 5 minutes.
  • Plunge into cold water.
  • Cut kernels from cobs, making 2 1/2 quarts cut corn.
  • Combine corn and remaining ingredients in large kettle.
  • Bring to boiling; reduce heat and simmer 20 minutes.
  • Ladle mixture into 5 hot pint jars, filling to within 1/4-inch from top.
  • Adjust lids.
  • Process in boiling water bath 20 minutes. (Start to count the processing time when water returns to boiling.)
  • Remove jars.
  • Cool on wire racks 12 to 24 hours.
  • Check jars for airtight seal.
  • Makes 5 pints.

    I love corn relish and can't wait to make this. It is a favorite with our garlic cheese spread. Mixed together on a crispy cracker it is the perfect blend of tart sweet and delcious.
