Sausage Onion Peppers Casserole Recipe

Ingredients

2 - 3 lbs Italian Sausage (I used sweet)

1 large onion sliced thin

2-3 red peppers and green peppers sliced

(or I used for quick use, a bag of frozen pepper stir-fy mix)

2 cans of drained (8 oz) can mushrooms

1/4 cup Parmesan Cheese

2 tsp Italian Seasoning

1/2 tsp Sazon Seasoning (Yes Sazon-got try it)

1/4 cup dried sun dried tomatoes

Salt & Pepper to taste

1/4 cup Olive Oil

3 tbsp Any flavor of Italian Salad Dressing (I used Roasted Red Pepper)

Directions

Preheat oven to 400

In large 9 x 13 pan, put sausage (I cut each link into 3 pieces) in pan

Put all the veggies on top

Put all seasoning and cheese in pan

Toss to mix with veggies

Add salad dressing and mix up a little

Drizzle olive oil over top (if you feel you need more oil, add but do not add too much as the sausage will release oil too and you don't want to have it floating in oil)

Cover with foil for the first 20 minues

Remove foil and continue cooking

Periodically toss the meat & veggies together to incorporate taste

Serve with pasta or hot Italian bread

OR you can put the veggies on the bottom of the pan (I include frozen corn) with the Italian Sausage layered on top. As the casserole cooks, stab the sausages a few times and the juice runs down through the bottom layer. Yummy.
