Southwestern Egg Rolls

- 2 cups cooked brown rice shopping list
- 1 1/2 cup cooked black beans shopping list
- 1 cup cooked corn shopping list
- 1/4 cup sun dried tomatoes shopping list
- 1 chopped green pepper shopping list
- 1 small onion, chopped shopping list
- 1 cup chopped spinach shopping list
- 1 tsp onion powder shopping list
- 1 tsp garlic powder shopping list
- 1 tsp cumin seed shopping list
- 2 tsp chili powder shopping list
- 2 tsp chicken bouillon (to make this vegetarian, use vegetable bouillon) shopping list
- 20 egg roll wrappers shopping list
How to make it
- Saute' onion, green pepper, spinach, and sun dried tomatoes in nonstick skillet sprayed with cooking spray.
- Place all ingredients in a large bowl and mix well.
- Place about 2 tablespoons of filling in each won ton wrapper and roll up from one corner, burrito style. I use some flour and water paste to glue the edge.
- Place egg rolls in a large skillet with about 1 inch of hot canola oil. Fry on all sides until golden brown. Let cool for a few minutes.
- Enjoy!
